Our 2016 Late Harvest Riesling bursts with luscious and enticing notes of tropical fruits, honey and soft spices. It gently warms the palate with the flavour of carmelized apples, butter and soft honey while providing a delightfully long finish.
We left our clone 49 Riesling grapes hanging on the vine until early November. Botrysized fruit was carefully selected to enhance both sugar content and aromatic complexity of the juice. The grapes were crushed & destemmed. The juice was left in contact with the skins for 24 hours after which the skins were pressed to extract all of the juice. Juice was cold settled over two days and then inoculated with a commercial yeast strain. Fermentation occurred at 10 degrees Celsius over three weeks. Once the residual sugar level reached 90g/L, the fermentation was seized to retain its natural sugar.
This is an age-worthy wine. You can enjoy it now or it can be cellared for up to six years.
