Made with 100% estate-grown Pinot Noir grapes, this Rosé smells and tastes like summer with notes of cotton candy, juicy raspberries and luscious strawberries. This clean and fresh, slightly off-dry Rosé has layers of flavours and a juicy, long finish.
Two clones of Pinot Noir grapes were blended for this Rosé. They were cold soaked and overall skin contact lasted for three days. The colour extraction process involved circulating the un-fermenting juice over the skins four times/day over two days. After extraction, the juice was cold settled over two days and inoculated with a commercial yeast strain. It was fermented at 15 degrees celsius over two weeks.
