Tasting Notes
The Cabernet Franc is a deep ruby red in colour with a bouquet of violets, dark plum, cassis, blackberry and a hint of earthiness on the nose. A medium bodied wine with a lingering berry fruit flavour on the palate with a silky smooth finish.

Winemaker Notes
Grapes were hand harvested towards the end of October in 2020. The grape bunches were destemmed, crushed and left to cold soak for 3 days for fruit extraction. The must is then inoculated with a selected yeast strain and allowed to ferment warm up to 26 degrees Celsius. Pump overs were done every 4 hours for colour extraction during peak fermentation. Followed by 3 days of post maceration on skins for fine tannin extraction before pressing and barreling. Barrel matured for 15 months in 225 liter oak barrels, a combination of 50% French oak and 50% American oak was used. 2% New oak, 14% 2nd fill and 84% neutral oak barrels used.
