Winemaker Notes
Select estate vineyard rows featuring Pinot Noir clones 115 and 667 were cropped to lower yields to grow concentrated fruit. The grapes were destemmed and crushed and cold soaked for 2 days for fruit and colour extraction. A Burgundy yeast strain was selected for fermentation, along with a combination of daily punchdowns and pumpovers during fermetation for the extraction of flavour and colour. 3 days of post maceration on skins before light pressing and barreling. The wine matured for 9 months in 225L French oak barrels from carefully selected, family-owned coopers. 17% of the oak barrels were new, and the remainder were neutral oak barrels to preserve the red fruit flavour.
