Wine Profile
Tasting Notes
A wine of stature and finesse showing dark fruit flavours of cassis and blueberries with dark chocolate and hints of cigar box coming though from the oak. A rich and full bodied bordeaux blend with a grippy tannin structure with a beautifully long finish. A bold wine that will develop further with optimal cellaring.

Winemaker Notes
Cabernet Franc and Merlot grapes were harvested from our mature estate Dry Creek Vineyard, planted in 2009. Cabernet Sauvignon grapes were harvested from our younger Red Rock Vineyard. The cultivars were vinified separately and blended after barrel maturation. The grapes were destemmed and crushed and cold soaked for 3 days for optimal colour and fruit extraction. Pump-overs and punch-down techniques were used during fermentation. On the completion of fermentation, a further maceration on the skins was done for an additional 10 days for tannin and colour extraction. Wines were barreled in new French oak and matured for a total of 15 months. Only the top 6 barrels were selected to make this premium red blend.
Food Pairing Notes
The perfect pairing for this wine is BBQ lamb loin chops with rosemary or top cut Sirloin with red wine reduction sauce.
