Tasting Notes
On the nose, pineapple, peaches, tropical fruits, warm toffee and oak dominate the aromatic profile of our elegant White Gold. Hints of caramel and hazelnut vanilla balance the juicy tropical flavours with very subtle oak notes. This luscious wine has a beautiful, long finish.
Winemaker Notes
This wine features 100% Lillooet estate-grown Chardonnay grapes. Half of the wine was wild fermented and the other half was fermented using a commercial monoculture yeast. Wild ferments (or spontaneous fermentation using native yeasts) is a vinification method we implement to diversify the microflora responsible for alcoholic fermentation. This diversification of yeast in the fermentation of our Chardonnay increases the complexity of our highly regarded white gold. It was then all aged in 100% new French oak barrels for 6 months. It underwent lees stirring 2 times a month and went through a partial malolactic fermentation to soften the acidity.

Wine is approaching its peak, but can be cellared until 2020-2022
