An elegant Pinot Noir with delicate red fruit aromas of cherries and red currants, with hints of earthiness and mushrooms. This medium-bodied Pinot Noir has soft tannins and a lingering cherry fruit flavour on the palate.

Winemaker Notes
100% estate grown Pinot Noir grapes were cropped to lower yields to grow concentrated fruit. The grapes were destemmed, crushed, and cold soaked for 2 days for fruit and colour extraction. A Burgundy yeast strain was selected for fermentation, along with a combination of daily punchdowns and pumpovers during fermentation for the extraction of flavour and colour. Three days of post maceration on the skins before light pressing and barreling. The wine matured for 9 months in 225L French oak barrels from carefully selected, family-owned coopers. 25% of the oak barrels were new, and the remainder were neutral oak barrels to preserve the red fruit flavour.
