Wine Profile
Tasting Notes
Clear and bright leaning to Pale lemon. A fruit forward example. Floral notes of elderflower and honeysuckle, White pear and quince with notes of yellow apple. A fresh lively palate with a crisp acidity. Lingering light bodied palate with notes of ginger spice

FB Grapes: 53% Outside Grapes: 47% (volcanic Hills and Savona)
Production Notes
100% Pinot Gris
Winemaker Notes
Hand picked over a period of 2 weeks. Reductive winemaking with the use of dry ice at crush and press. 24 hours of cold settling before the clean juice was racked. 50% of the grapes were crushed and destemmed and given 6 hours of skin contact before pressing, leading to structure and more aromatics. The remainder was crushed/destemmed and pressed off immediately giving a fresh component. Thiol rich aromatic yeast was used and cold fermentation at 11 degrees to enhance the aromatic profile. After fermentation the wine was aged for 5 months on the lees to give a full creamy texture.
Food Pairing Notes
Enjoy this wine on its own or with light seafood dishes. Oysters or calamari. A simple creamy pasta will also work well.
